The ivory-colored Bucheron is well known for offering the taste and texture of two cheeses in one. This cheese usually matures for 5-10 weeks, giving it a dense center and gooey cream line rich in flavor with discreet, earthy undertones that blend perfectly with the delicate flavors of Montchevre’s high quality, fresh goat’s milk. The beautiful rind on the Bucheron makes it the perfect centerpiece for your cheese board. It is also delicious melted into a quiche, on a crostini or on your favorite steak.
The rind of Montchevre’s Goat Milk Brie is made of a white penicillium, often referred to as the “fleurie.” This white, velvet-like exterior protects a soft, oozing, and creamy inside that has a smooth and delicate taste. Like many soft-ripened cheeses, the taste and flavor profile evolve through a natural aging process called “lipolise”. The cheese will develop stronger, earthy accents and become softer and creamier as it slowly ages from the outside-in. The Cabrie is the perfect cheese to serve as part of your cheese board or appetizer and pairs deliciously with your favorite Pinot Noir. When cooking with the Cabrie, we suggest placing it atop your favorite vegetable or protein and lightly melting in the oven. Montchevre’s Goat Milk Cheddar is hand-crafted with full respect for the most traditional cheddar manufacturing process. This cheese has an outstanding, smooth cheddar texture and is very light with a mild goat-milk tang. Our cheddar—a healthy alternative to cows milk cheddar with fewer calories and less fat—comes in an 8 oz log, individual .83 oz cheddar sticks, or in a pack of 12 x .83 oz sticks. Chevre in Blue
The Chèvre in Blue was the first very first cheese produced by Montchevré in 1988 and has since received many awards. This rindless cheese is made from prime quality goat milk and aged over 90 days, allowing the flavor of the goat milk to mature and blend in with the blue. Throughout this process, the blue and grey veins of the cheese mature and envelop the cheese. The light tang of the goat cheese blends beautifully with the blue and makes for a rich and complex bite. Crumble our blue on a salad or into a salad dressing, or simply enjoy on your cheese board with some crunchy rustic bread, fig spread and nuts.
Montchevre’s Goat Milk Feta puts an innovative twist on a traditionally Greek cheese. Montchevre has a network of over a dozen independent family farms that produce high quality organic* milk for its Organic Goat Cheese Line “Coeur de Chèvre”. The Coeur de Chèvre 4 oz logs come in Natural and Garlic & Herb, both of which are deliciously creamy and rich in flavor. The Chèvre Fleurie is a soft-ripened goat cheese with a bloomy ivory rind that brings out a wonderful, earthy flavor. As the cheese ages, a gooey cream line begins to form below the rind complementing the stronger taste of the firm center.
