The rind of Montchevre® Cabrie cheese, a goat milk Brie Cheese, is made of a white penicillium, often referred to as the “fleurie.” This white, velvet-like exterior protects a soft, oozing, and creamy inside that has a smooth and delicate taste. Like many soft-ripened cheeses, the taste and flavor profile evolve through an aging process called “lipolise”. The cheese will develop stronger, earthy accents and become softer and creamier as it slowly ages from the outside-in. CHÈVRE IN BLUE® CHEESE
Montchevre® Chèvre in Blue® Cheese was the first very first cheese produced by the cheesemakers back in 1988 and has since received many awards. This rindless cheese is made from prime quality goat milk and aged over 90 days, allowing the flavor of the goat milk to mature and blend in with the blue.
