Mini Goat Cheesecakes


  • 1 cup graham cracker crumbs
  • ⅓ cup melted butter
  • 8 ounces of softened cream cheese
  • 4oz softened Montchevre® Plain Goat Cheese
  • ½ cup of sugar
  • 2 eggs
  • Assorted fruit and balsamic glaze for garnish


  1. Preheat the oven to 350°.
  2. In a bowl mix together the graham cracker crumbs and melted butter until combined.
  3. Evenly distribute the graham cracker crumbs between 8 4” tart pans and pack it in tight to form a bottom crust. Set aside.
  4. Add the cream cheese, goat cheese, and sugar to a stand mixer with the paddle attachment and mix on high speed for 5-7 minutes or until light and fluffy.
  5. Next, add in 1 egg at a time until completely mixed in.
  6. Evenly pour in the cheesecake batter between the 8 tart pan and then transfer them to a cookie sheet tray.
  7. Bake at 350° for 20-22 minutes or until lightly browned on the edges and firm in the center.
  8. Cool to room temperature and chill.
  9. Serve with assorted fruit and glaze.
