Ingredients
- 2 – 4 oz Hibiscus Berry Goat Logs, at room temperature
- 3 T Cranberry Raspberry Juice
- 1 T Heavy Whipping Cream
- 6 Slices of Crusty Bread, toasted
- 2 T Sliced Almonds, toasted (optional)
- 2 T Balsamic Reduction (optional)
- For the Berry Salad:
- ½ C Each of Blueberries, Strawberries and Blackberries
- 1 ctr Pomegranate Seeds
- 1 Navel Orange, zested and juiced
- ¼ C honey
- ½ T Fresh Mint, chopped
Directions
1. Combine all ingredients for the salad in a large bowl. Toss and refrigerate until needed.
2. Place goat, juice and cream in the bowl of a food processor and blend until smooth. Spread goat cheese on toast and top with berry salad. Garnish with nuts if using and drizzle with balsamic glaze.
