Roasted Figs with Goat Cheese
Preheat oven to 350 F degrees.
Roughly chop walnuts and arrange in a single layer onto a baking sheet.
Cut figs in half, length-wise, and place them on a separate baking sheet from the walnuts.
Once the oven is pre-heated, place the fig slices and walnut pieces in the oven on separate racks.
Allow the walnuts to toast for 5-7 minutes, checking every minute or so until golden brown and fragrant.
***Be careful not to burn them!
Remove the fig slices after 15-20 minutes, or when slightly softened.
Lift the figs onto plates and divide the Montchevre goat cheese among the figs. Drizzle a little honey over each one and sprinkle with toasted walnuts and thyme.
Enjoy while warm!
