Cauliflower Potato Gratin with Goat Cheese

Ingredients

  • 1 Medium head Cauliflower, cut into florets
  • 1 Medium sized Potato, diced
  • 4 tbsp Olive oil
  • 1 tbsp Butter
  • 1 tsp Cumin seeds
  • 1 tbsp Coriander seeds crushed (Use mortar and pestle)
  • 1 Onion roughly chopped
  • 4 Garlic cloves chopped
  • 1 can Diced Tomatoes (14 oz)
  • ½ tsp Cayenne powder optional
  • ½ tsp Curry powder (Garam masala powder) optional
  • Black pepper to taste
  • Salt to taste
  • 2 Eggs
  • ⅓ cup Heavy cream
  • 4 oz Montchevre® Truffle Goat cheese
  • 5 sprigs Coriander leaves
  • ⅓ cup Parmesan cheese
  • Spring onions optional

Directions

Step 1
  1. In a large pan on medium heat, add 2 tbsp of olive oil, and a tbsp of butter.
  2. To this add cauliflower florets and diced potatoes, sprinkle some salt and roast until cauliflower turns golden brown in color. This should take about 20 mins on medium flame.
Step 2
  1. Meanwhile, in another pan on medium heat, add remaining 2 tbsp of olive oil.
  2. Add cumin seeds, finely crushed coriander seeds, chopped onions, and saute until onions turn light golden in color.
  3. Now, add chopped garlic cloves and continue sauteing until onions turn golden brown in color.
  4. To this, add a can of diced tomatoes, and season with a light sprinkle of salt, black pepper powder, and optionally some cayenne & curry powders.
  5. Cook until most of the liquid from diced tomatoes evaporates. Should take about 20 - 25 mins.
Step 3
  1. In a bowl, crack two eggs. Add heavy cream and half portion of goat cheese and whisk until well combined. Keep this aside.
Step 4
  1. Preheat the oven to 375 degree F and grease 10 inch spring form baking pan or casserole dish with some butter
  2. Once the roasted cauliflowers have slightly cooled down, add onion-tomato blend, whisked egg-goat-cheese mixture, parmesan cheese, chopped coriander leaves and mix well.
  3. Transfer this to a greased pan. Dot the top with remaining goat cheese (the more the better )and bake in oven till golden brown and bubbly.
  4. Remove from the oven, and rest for 5 mins.
  5. Cauliflower Potato Gratin With Goat Cheese is ready. Garnish with chopped coriander leaves and green onions and serve it to your family and friends. Happy Thanksgiving
