1 cup graham cracker crumbs
1/3 cup melted butter
8 ounces of softened cream cheese
4oz softened Montchevre® Plain Goat Cheese
½ cup of sugar
Assorted fruit and balsamic glaze for garnish
Preheat the oven to 350°.
In a bowl mix together the graham cracker crumbs and melted butter until combined.
Evenly distribute the graham cracker crumbs between 8 4” tart pans and pack it in tight to form a bottom crust. Set aside.
Add the cream cheese, goat cheese, and sugar to a stand mixer with the paddle attachment and mix on high speed for 5-7 minutes or until light and fluffy.
Next, add in 1 egg at a time until completely mixed in.
Evenly pour in the cheesecake batter between the 8 tart pan and then transfer them to a cookie sheet tray.
Bake at 350° for 20-22 minutes or until lightly browned on the edges and firm in the center.
Cool to room temperature and chill.
Serve with assorted fruit and glaze.
