Ingredients
4 small diced tomatoes
1 seeded and small diced jalapeños
½ peeled and small diced yellow onions
juice of 1 lime
¼ cup of chopped cilantro
4 corn tortillas
½ cup of warmed pinto beans
8 strips of crisp cooked bacon
4 fried or hard-boiled eggs
1 peeled, seeded, and sliced avocado
½ cup of shredded Montchevre® Goat Cheese, Cheddar Style
Salt and pepper to taste
Directions
Salsa: Add the tomatoes, jalapeños, onions, lime juice, cilantro, salt and pepper to a medium size bowl and mix until combined.
Add the corn tortillas to a plate and layer up as followed: beans, bacon, eggs, sliced avocado, salsa, and shredded cheese.
Served with sliced limes and extra cheese and salsa.
