Huevos Rancheros



  • 4 small diced tomatoes 
  • 1 seeded and small diced jalapeños 
  • ½ peeled and small diced yellow onions 
  • juice of 1 lime 
  • ¼ cup of chopped cilantro 
  • 4 corn tortillas 
  • ½ cup of warmed pinto beans 
  • 8 strips of crisp cooked bacon 
  • 4 fried or hard-boiled eggs 
  • 1 peeled, seeded, and sliced avocado 
  • ½ cup of shredded Montchevre® Goat Cheese, Cheddar Style 
  • Salt and pepper to taste 


  1. Salsa: Add the tomatoes, jalapeños, onions, lime juice, cilantro, salt and pepper to a medium size bowl and mix until combined. 
  2. Add the corn tortillas to a plate and layer up as followed: beans, bacon, eggs, sliced avocado, salsa, and shredded cheese. 
  3. Served with sliced limes and extra cheese and salsa.
