Hasselback Butternut Squash with Goat Cheese and Honey Butter



  • 4 tablespoons of softened unsalted butter
  • 2 tablespoons of honey
  • 1 peeled, seeded and sliced in half large butternut squash
  • 2 teaspoons of sliced chives
  • 2 teaspoons of finely chopped fresh sage
  • Crumbled Montchevre® Goat Cheese
  • Salt and pepper to taste


  1. Preheat the oven to 425°.
  2. In a small bowl mix together the butter, honey, salt, and pepper until completely combined and set aside.
  3. Slice the butternut squash into thin slices without completely cutting through to have them form the appearance of being “Hassel back.”
  4. Place the butternut squash slice side up on a cookie sheet tray lined with parchment paper and generously spread the honey butter all over the top.
  5. Bake in the oven at 425° for 20-25 minutes or until lightly browned on top and cooked through.
  6. Garnish with chives, sage, and crumbled Montchevre® goat cheese, and serve.
