Goat Cheese and Spaghetti Squash Salad

  • 1 Spaghetti Squash
  • 1 log of Montchevre® goat cheese or Montchevre® Goat Cheese Crumbles
  • 2 cups of Greens
  • 1 cup diced Tomatoes
  • salt, pepper to taste
  • red pepper flakes to taste
  • fresh basil leaves to taste


  1. Cut and deseed spaghetti squash and boil until tender in a large stock pot.
  2. Scrape spaghetti squash into a bowl.
  3. Saute tomatoes in olive oil with salt and pepper. Cut off heat and toss in 2 cups of greens to wilt.
  4. Mix greens and tomatoes with cooked spaghetti squash with additional salt and pepper to taste. Add red peppers if you like a bit of a kick!
  5. Plate up the hot spaghetti squash and top with Montchevre Goat Cheese Crumbles & enjoy!
