Crock Pot Chicken Tacos with Mango Salsa and Goat Cheese

Ingredients

  • 4 chicken breasts
  • 1-2 tbsp taco seasoning
  • 16 oz mango salsa
  • Corn or flour tortillas
  • Montchevre goat cheese
  • Lime (optional)

Directions

  1. Combine chicken, seasoning, and 12 oz. salsa in crock pot
  2. Cook on low for 6 hours
  3. Shred and stir chicken with fork
  4. Place shredded chicken on tortillas, garnishing with lime (if desired), additional mango salsa, and crumbled Montchevre goat cheese
