Chevre Torta

Serves 20-30

2-1/2 LBS. GOAT CHEESE
2-1/2 T. MINCED GARLIC
1/2 TBS. FRESH CRACKED PEPPER

GARNISH:
4 TBS. ARTICHOKES (CHOPPED)
2 TBS. CAPERS
2 TBS. KALAMATA OLIVES (CHOPPED)
5 TBS. SHALLOTS OR RED ONIONS (MINCED)
2 TBS. FRESH BASIL OR PARSLEY
3 LG. SUNDRIED TOMATOS (CHOPPED)
SARAN WRAP
6 X 3 SPRINGFORM PAN

Lightly whip goat cheese with garlic and pepper. Place Saran in 6x3 spring form pan. Place half of the goat cheese mixture in spring form pan. Add half of the garnish. Place second layer of goat cheese over garnish.

Special Notations: Cover with Saran and weight down for 6 hours. Use second half of garnish for presentation.

Serve with crostini, baguette, or crackers.
