This traditional soft-ripened lactic chèvre has an ivory colored center surrounded by a white bloomy rind, and is hand-crafted to achieve a distinctive tangy, earthy flavor. Our Bucheron makes for excellent salads, marinating, or simply chevre for the board.

Le Cabrie
Montchevré’s largest soft ripened goat cheese, Le Cabrie, is made from prime quality goat milk and covered with a white penicillium mold.
As it ages, the Le Cabrie becomes soft and creamy. Made according to the true soft ripened techniques, Le Cabrie is not stabilized and will get “runny” with aging.
This cheese is great for a cheese board, or paired with fruit for a healthy snack.

The Half Moon Cabrie is exactly what it sounds like, half of the full-sized Le Cabrie. The Half Moon Cabrie is made from prime quality goat milk and covered with a white penicillium mold. It is aged to achieve a smooth, delicate, yet mild goat flavor. Made according to the true soft ripened techniques Half Moon Cabrie is not stabilized and will get “runny” with aging.
Half Moon Cabrie is available in a 1.1 lb. "half moon" size, and is packed 4 to a case. Other Cabrie products include the Mini Cabrie and Le Cabrie.
