Cherry Goat Cheese Scones

Ingredients

  • 2 Cup all purpose flour
  • 1 Tbls baking powder
  • ¼ tsp salt
  • 4 Tbls granulated sugar
  • ⅓ Cup unsalted butter chilled cut into small chunks
  • ½ Cup milk
  • 3 oz Montchevre® goat cheese
  • ¾ Cup fresh cherries pitted, rough chop (about 25 cherries)
Cream Cheese Glaze:
  • 4 oz cream cheese softened
  • ½ Cup powdered sugar
  • ½ tsp vanilla bean paste or extract
  • 1 Tbls milk or water

Directions

  1. Preheat oven to 400 degrees
  2. Place flour, baking powder, salt and sugar in a bowl. Mix until combined.
  3. Place chopped butter in the flour mixture. Toss to coat butter in flour. Using your fingers, rub the butter with your finger tips until it breaks down and everything looks like coarse sand.
  4. Add in the goat cheese and repeat
  5. Add in the milk and mix with a spoon until it forms a sticky ball. Mix in the cherries, try not to get as much of the excess cherry juice in as you can. Mix with your hands until combined.
  6. On a sheet tray lined with parchment paper or a silicone baking mat, roll in your hands 2 inch balls of dough. Place on the cookie sheet, flatten dough balls to 1 inch thick.
  7. Bake for 15-20 minutes until light golden brown. Let cool on a wired rack.
  8. While scones are cooling, whip the cream cheese with the powdered sugar. Add in the vanilla and milk and whip until smooth about 1 minute.
  9. Top scones with glaze, serve and enjoy!
